As a child, Chef Daniela Craciun learned to cook by working alongside her mother: “Growing up in communist Romania was always challenging when it came to putting food on the table, but at my mother’s side I learned to be creative,” she says. “Eventually I learned the joy of smiling faces when it became my responsibility to cook for our family while my mother was at work.”
After absorbing Romanian and Hungarian cooking styles, the chef moved to Bologna in Italy and began her formal training in Northern Italian cuisine. “I spent years overcoming many obstacles of allergies and special dietary needs,” she says, “but it deepened my knowledge and allowed for a more diverse group of people to enjoy my food.”
Now she creates catering menus that include many vegetarian and vegan options, as well as gluten-free recipes.
Emphasizing the Healthy, Farm Fresh Side of Food
For eight years, Chef Daniela operated a Naples, FL, restaurant that featured homemade breads and popular dishes such as chicken paprikash, spaetzle, schnitzel, and old-fashioned cabbage rolls.
But after 8 years, she felt it was time to follow a new path. This path lead her to getting a Certificate for Nutrition and Healthy Living Program from Cornell University. Now she provides healthy catering, meal plans, and education on how to maintain a healthy lifestyle.
“My foremost principle to cooking is making healthy dishes from scratch using only the freshest ingredients, just as I learned from my mother,” she says. “Although I can’t grow all of my own ingredients like my family did, I buy only from local farms so I know exactly what is going into my dishes.”
She creates a fusion of foods from different generations and works to create delicious healthy meals that make people happy.
